Revitalized in the summer of 2025 under the careful stewardship of Bluepoint Hospitality, The Washington Street Pub enters a new era without surrendering its soul. James Beard Award winner Harley Peet and Maryland-born Chef Daniel Pouchron lead the culinary vision — honoring the rhythms of this place while bringing exacting craft to every plate and pour.

The spirits program pays tribute to what has long been called America’s indigenous spirit — bourbon —corn-born, barrel-aged, and deeply tied to this country’s story. More than 40 rare bourbon selections anchor the menu, among them the Kentucky Owl 1879 Spirit, a pre-Prohibition bourbon seized and lost in 1916, revived a century later by the founder’s great-great-grandson; Kentucky Owl Batch #13, Master Blender John Rhea’s final and farewell blend; Old Carter Very Small Batch #4, with fewer than 1,000 bottles ever produced; and Calumet Farm Single Rack Black 15 Year — the brand’s most aged, highest-proof expression to date. These are not merely drinks. They are artifacts.

Chef Pouchron’s classical training and regional sourcing yield a menu that is refined without pretense. The Chesapeake speaks through Blue Crab & Artichoke Dip, Maryland Crab Soup, and the Eastern Shore Crab Cake Sandwich. The Raw Bar offers local oysters — half shell and chargrilled — alongside Jumbo Shrimp and Chilled Lobster. A tradition with deep roots on both sides of the Atlantic, the Sunday Roast — available after 12PM on Sundays — arrives tableside with Yorkshire pudding, roasted potatoes, peas, carrots, and gravy, a ritual as comforting as the room itself.
